Pineapple and Mandarin Orange Jello Salad

"This recipe is so easy to put together and is a perfect addition to any potluck or family gathering.  It combines simple ingredients and only takes minutes to make.  If you like orange and pineapple, you will LOVE this recipe!"


1 large (6 ounce) package of orange flavored Jello, unprepared
1 large (16 ounce) container of cottage cheese
1 large (20 ounce) can of crushed pineapple, drained very well
2-(8.25 ounce) or 1-(15 ounce) cans of mandarin oranges, drained very well
1 (8 ounce) container of Cool Whip, thawed
 
Mix together the (dry) orange Jello and the cottage cheese.  Allow to sit for 10 minutes.  Stir in drained pineapple and mandarin oranges.  Fold in Cool Whip.  Refrigerate until serving.  Simple huh?

    1. Mark, if you want 4x the amount of salad my suggestion would be to use 4 times the ingredients- for example use 4 packages of orange jello, 4 containers of cottage cheese; etc. I hope that helps!

  9. How far in advance can you make this and how many days do you think it would keep once prepared?

    1. Hi Lindsey. Thanks for your question. This salad is so easy to put together that we usually mix it up and serve it right away. If you need to prepare it in advance, I would mix all of the ingredients together except the cool whip. Then when you're ready to serve the salad, you can stir in the cool whip that way the salad will be fluffy. We don't usually have a lot of leftovers (because the salad is a family favorite) but when we do have any left, we just refrigerate it and it keeps for a couple days. I hope that helps!     1. Thanks for your question Yvonne. To be honest with you I have never made this salad with anything other than cottage cheese. If you don't want to use the cottage cheese, you might try using 2 (8 ounce) containers of Cool Whip instead of just one. The salad won't have the same texture or taste, but I think it will still be tasty. I hope that helps.

  13. Added 1 drained jar of maraschino cherries and folded them in as well as topping the dish with a jar of cherries. Looks beautiful and tastes great!

  14. I've made this salad a few times now, and for new years eve I did something different with it. I took my hand mixer (for puree) and made the cottage cheese less curdy. It worked great!!!!

  16. I am so glad I found this. My Aunt made this every Thanksgiving when I was growing up and we loved it. We called it "the pink stuff" (I have no idea why, since it is orange, not pink). I wanted to make it this year as I always try to add a blast from the past at our Thanksgiving table. It had been so many years since I made it and could not find the recipe so I googled it hoping it may be out there somewhere...and here it is. THANK YOU SO MUCH!!!!!   17. Can you use a sugar-free orange Jello since I am trying the keto diet and do you have type 2 diabetes oh I can find was 0.3 oz box which is 8.5 grams how many boxes would it take to equal 6 oz of Jell-O?

  19. I couldn’t believe it when I saw this recipe. I remember my Dad making this when I was just a little girl. (A long time ago) I have been making this for years myself . Often by request. So many people have asked me for the recipe. Not only is it a delicious salad, it is so easy to make. I always double the recipe. All these years I thought my Dad created this. I know he did create others. To me and many family members and friends, he could cook better than anyone.
