Chocolate Gravy

"My Dad shared this recipe with my Sister and she shared it with me.  It is a Southern classic that is delicious served over biscuits!  I know that my sister loves it and has made it often for her family over the years."
 
3 cups milk
1 cup sugar
6 Tablespoons cocoa powder
5 Tablespoons flour
1/4 teaspoon salt
1 teaspoon vanilla
1 Tablespoon butter
Biscuits
 
In a large saucepan, warm milk.  Combine sugar, cocoa powder, flour and salt and add to warmed milk.  Stirring constantly, cook mixture until it bubbles.  Add vanilla and butter.  Cook until desired consistency.  Serve over biscuits.

Zesty Cocktail Sauce

"Whether you are preparing breaded shrimp, coconut shrimp, a zesty shrimp cocktail or any other seafood dish, this cocktail sauce is a perfect condiment.  I have also used it in recipes that call for store bought cocktail sauce as an ingredient.  It gets it's spicy 'kick' from lots of horseradish and hot sauce."
 
6 ounces Homade brand Chili Sauce, from a 12 ounce jar (I have also used Heinz Chili Sauce.)
2-3 Tablespoons cream-style Horseradish (The more horseradish you use, the spicier the sauce!)
1 teaspoon fresh lemon juice
1/2 teaspoon Worcestershire sauce
2-3 drops of Tobasco hot sauce, or desired amount
1/2 teaspoon salt
1/2 teaspoon Old Bay seasoning
 
Combine all ingredients.  Refrigerate for a couple hours to allow flavors to blend together.  Serve with your favorite shrimp or seafood recipe.

Biscuits with Sausage Gravy

"This recipe is one of our favorite weekend breakfasts.  My step-dad taught me how to make it many years ago and my husband requests it often!"

Cook sausage until golden brown!

After adding the flour, cook for 1-2 minutes.    
 
Add the milk.  The mixture will be very thin.

Cook until gravy is thickened. 

Pour gravy over prepared biscuits and Breakfast is served!


RECIPE
8 frozen or refrigerated biscuits, baked according to package directions (Of course you can use home-made too!)
1 package of pork sausage roll (I use Jimmy Dean sausage with sage)
4 Tbsp. all-purpose flour
4 cups milk
salt and pepper, to taste

Prepare biscuits, according to the package directions.  In a large skillet over medium-heat, brown sausage.  Do not drain.  Sprinkle flour over sausage and stir.  Let cook for 1-2 minutes.  Stir in milk  and bring to a boil.  Add salt and pepper to taste.  Allow to cook until gravy has thickened, stirring occasionally.  Serve over biscuits.

Note:  If gravy becomes too thick, just add a little milk to thin to desired consistency.
